Darcy’s Dishes: Summertime barbeque and mouthwatering side dishes

SAN ANTONIO — Summertime is upon us, and that means it’s time for barbecues and cookouts!

KENS 5 Digital Reporter Darcy Ramirez found some fresh recipes to spice up your spread – from a barbecue-inspired twist on “elote” to some juicy watermelon pops.

Chamoy Watermelon Pops Ingredients:

  • Mini watermelon
  • Popsicle sticks
  • Fruit by the Foot 
  • Chamoy
  • Mini plastic bowl
  • Tajin 

Chamoy Watermelon Pops Directions:  

  • Grab watermelon cut into square-shaped piece
  • Put popsicle stick through the watermelon
  • Wrap the Fruit by the Foot around the watermelon
  • Grab mini platic bowl and cut a hole through the bottom
  • Place the watermelon popsicle inside the mini bowl (eliminates the messiness) 
  • Drizzle chamoy on the watermelon popsicle
  • Sprinkle tajin on the watermelon popsicle

Elote Corn Ribs Ingredients:

  • 2-3 corn on the cobs 
  • Olive oil
  • Lemon pepper
  • Garlic powder
  • Chili powder
  • Black ground pepper
  • Smoke paprika
  • Salt
  • Mayo
  • Chopped chipotle peppers in adobo sauce 
  • Lime
  • Queso fresco or cotija cheese 
  • Cilantro

Elote Corn Ribs Directions: 

  • Cut each corn on the cob into fourths (recommended to stand corn up straight and cut down) 
  • In a separate bowl, mix together 4 tbsp of oil oil, 1 tsp of lemon pepper, 1/2 tsp of garlic powder, 1/2 tsp of chili powder, 1/2 tsp of smoked paprika, 1/4 tsp of black ground pepper and a pinch of salt
  • Using a brush, spread the mixture onto the corn pieces
  • Air fry corn at 400 degrees for 10 minutes (flip halfway through)
  • In another bowl, mix 1/2 cup of mayo, 2 tsp of chopped chipotle peppers in adobo sauce, 1/2 lime (squeeze juice) and dash of salt
  • Pull corn out of air fryer once done
  • Drizzle mayo mixture on top of corn 
  • Sprinkle queso freso or cojita cheese on top 
  • Garnish with cilantro

BBQ Sundae Ingredients:

So for this recipe, you can choose whichever protein (barbeque, fajitas, sausage, etc.) and sides (potato salad, coleslaw, green beans, etc.) to create the BBQ sundae. Below are the ingredients the digital reporter used to make the BBQ sundae.     

  • 1 box cornbread mix
  • Protein: brisket, chicken, sausage (whatever you want) 
  • Mashed potatoes
  • Baked beans
  • Dill pickles
  • Mason bar

BBQ Sundae Directions:

  • In a mason jar, start stacking up your food (recommended to start with sides)
  • In the video: Put a scoop of cornbread into the mason jar followed by mashed potatoes and baked beans
  • At the top of the mason jar place your barbeque (protein of your choice)
  • Garnish with dill pickles or jalapenos
  • Enjoy!
