SAN ANTONIO — With the San Antonio Stock Show and Rodeo in full swing, you might find yourself in a rodeo mood while in the downtown area.
A new pop-up is giving people that rodeo fix while offering sweeping views of downtown San Antonio. It’s called the Dusty Diamond and it’s taking over the High Praise rooftop bar at the Intercontinental San Antonio River Walk hotel.
The pop-up offers rodeo-themed cocktails, western décor and even a mechanical bull with menacing red eyes and smoke coming from its nostrils. Guest can take a ride on the bull without fear of injury since the crash pad is inflatable. They can also practice their lassoing skills.

Some of the cocktails include the Truck on Fire, which is served in a boot-shaped mug and includes Pendleton Whiskey and whipped cream. They also offer the Girl in the Mirror, with Don Q coconut rum, sparkling white wine, orange juice and a special cotton candy floater
The food includes a gourmet menu of nibbles inspired by Southern faire. The staff recommends the pulled-pork sliders, which are mixed with chicharron and a side of fresh jalapenos. They also offer truffle parmesan fries with a side of cilantro-infused aioli. Other menu items include fried deviled eggs, chicken “lollipops”, chips and caviar and a charcuterie board.

It’s the ultimate ‘Instagramable” experience combining rodeo lore with the glamour of downtown San Antonio at night. The Dusty Diamond is open every Thursday by reservation through Sunday through Sunday, March 2. Click here for reservations.
