
The owners said they are hoping to open later in the week, but that’s not set in stone.
BULVERDE, Texas — A Bulverde eatery will soon be back in business. It has been nearly two years since Verde Bistro Tapas And Martini Bar was forced to shutdown because of a fire.
The owners Mari and Oscar Olivas said the fresh start is a long time coming. But, Mari also remembers the day when their dreams went up in flames. She said a fire started at a business next door.
“I won’t forget March 17, 2023,” she said. “There was a first fire. They put it out. We thought it was over and then at 12 at night we received another phone call that it was completely on fire.”
She said the second fire destroyed the first half of the restaurant that had been there since 2018.
“I thought we were done,” she said.
However, determination kept this couple from giving up.
“We are not going to open this up anywhere else,” Mari said. “Because this started in Bulverde and it wouldn’t be the same bistro in a different facility. Our customers are very special to us. This is home.”
Right now, the owners are scrambling to finish up the last minutes touches. The new digs are still in its original spot in downtown Bulverde. The owners even put up a charred window frame right when you walk in, as a reminder of what they overcame.
“We could have just said from day one that’s it, we are done,” Mari said. “But thanks to our community and support that we have felt and the love we have received from everyone, I think that’s something we will always have in our hearts.”
The owners will have a final inspection next Wednesday. Mari said they are hoping to open later in the week, but that’s not set in stone.
