Businesses are rolling out pop-ups, from specialty cocktails to cowboy-chic decor.

SAN ANTONIO — The San Antonio Stock Show & Rodeo takes over the Alamo City every year, and locals are dressing up to get in the spirit. Downtown hotel bars and businesses are rolling out pop-ups, from specialty cocktails to cowboy-chic decor.

Here’s where you can saddle up this season:

InterContinental San Antonio
The rooftop bar High Praise transforms into The Dusty Diamond from Feb. 12–March 1, complete with rustic Western decor, a mechanical bull, and a custom hat bar. Guests can sip cocktails like the “Boots Stop Working,” made with Tito’s vodka, Cointreau, raspberry, lemon and rose, or the “If I Was a Cowboy,” featuring Pendleton Canadian whisky, creole orgeat, Angostura and pecan bitters. Guests can pair drinks with bacon-wrapped jalapeños or cowboy Wagyu chili. Reservations recommended.

Kimpton Santo
Tenfold Rooftop becomes Boot Scoot on the Skyline every Thursday during rodeo season, offering line dancing, pop-ups, tattoos, and Western-inspired drinks. Crowd favorites include the “Lazo de Lumbre,” with reposado tequila, coconut rum, vanilla, espresso and walnut; the “Smoke & Spurs,” a mix of mezcal, reposado tequila, agave, citrus and spiced mole bitters; and the “Black Gold,” blending bourbon, peach, black pepper and Angostura bitters.

Plaza San Antonio Hotel & Spa
Corinne San Antonio is offering The Western Pour, a menu inspired by Texas flair, running Feb. 12–March 1. Cocktails include the “Stockyard Old Fashion” (Elijah Craig, demerara syrup, aromatic and orange bitters), “Strawberry Ranch Water” (Lalo tequila, lime juice, strawberry oleo and soda), “Alamo Sunset Margarita” (Patrón, lime juice, agave and orange juice), and the “Texas Peach Mule” (Deep Eddy Peach, lime juice, simple syrup and ginger beer). Drinks are available with lunch and dinner service.

Thompson San Antonio Riverwalk
The Moon’s Daughters rooftop transforms into Moon’s Saloon from Feb. 16–March 7. The bar will serve rodeo ranch waters made with name-brand tequila, and the kickoff event is Feb. 18. 

Hotel Contessa
Starting Valentine’s Day, enjoy the Boots & Bourbon brunch every Saturday and Sunday from 7 a.m.–3 p.m. Guests can sip Western-themed cocktails like the “Not My First Rodeo” with Lalo tequila or the “Outlaw Old Fashioned.”
